My love for the honeybee began the spring of 2009. The first encounter with the honeybee was when I was sitting in my back yard. I observed multiple swarms moved through my back field on their way to a new home. I was in total fascination with whole event. It was 4 years before actually possessing my own hives. I used the honeybee as the main subject while writing multiple papers. While conducting research for these papers a fascination for the honeybee developed and along with a better understanding of the positive impact on the environment. These years of research and study has and is still driving the development of our boutique honey brands.

Now you will find that raw unfiltered honey will crystalize if it is stored at temperatures less then 80 degrees Fahrenheit. To reliquefy honey, we must increase the temperature to the range from 85 to 110 degrees Fahrenheit.
Use of a double boiler, heat lamps, or ovens that do not exceed 115 degrees Fahrenheit are suggested. Maintaining honey near or around 90 degrees in my opinion is the best temperature to keep it in a liquid state.
This is based on the fact honeybees keep the hive at 90 degrees all year around no matter what the exterior temperature.
So, if you prefer a liquid state of the honey maintain the honey at or close to 90 degrees.

Standard for Premium Honey is from 16% to 20%
From year to year & season to season honey can present itself in multiple different shades & flavors. So, Rob-Bee's suggest purchasing from different parts of your area & on your travels to taste the goodness local beekeepers are producing.
There is a variety of definitions on what make a local product, but what they all have in common is that Local Products exist in a define area or location geographically such as a state, neighborhood or geographic location within a 400-mile radius.
NC is split into 3 zones Eastern, Central, and Western zones. Each of these zones carry the same complements of pollinating plants.
